Mediterranean Wrap  

Packed with a medley of fresh, crispy vegetables and savory roasted red pepper hummus or beef 

(or maybe both), coupled with its ability to be versatile and easily customized, the Mediterranean 

wrap is sure to please vegetarians and meat lovers alike. If you’re looking for low effort but big 

taste, you found it. Enjoy.  

Ingredients  

4 Large tortillas  

1 Cup Roasted red pepper hummus and/or 1 1/2 cup chopped deli roast beef (lunch meat) 

1 Cup chopped cucumber 

1 Cup chopped Grape tomatoes 

2 Cups Chopped Romaine lettuce  

1/4 Cup sliced Kalamata, green olives or black olives  

1 Red bell pepper  

3/4 Chopped red onion  

3/4 Cup feta cheese  

Tzatziki sauce, dressing or dip If desired  

Instructions  

1.Chop tomatoes, onion, lettuce and olives, peel and chop cucumber.  

2.Chop sliced lunch meat.  

3.Slice and sauté red bell pepper, drain and cool.  

4.Spread roasted red pepper hummus on 4 tortillas.  

5.Fill all 4 tortillas with equal portions of the chopped vegetables and chopped deli roast 

beef, sprinkle with feta cheese and top with Tzatziki sauce (if desired) roll tortilla, cut in 

half to serve.  

 

 

 

 

Makes 4 wraps
