Sweet blackberries paired with crispy spinach tastes like sunshine, this salad is simple to make and so tasty, I recently made it and tossed in some cold shrimp, and I’m convinced it’s the perfect summer salad.
Ingredients:
- 5 cups fresh spinach leaves
- 1 cup blackberries
- 3/4 cup blueberries
- 2 avocados, chopped
- 1 ½ cups cucumber, sliced thinly
- 1/3 cup feta cheese
Vinaigrette:
- 1/3 cup olive oil
- 2 tbsp freshly squeezed lime juice
- 1 tbsp maple syrup or honey
- 2 tbsp finely chopped fresh mint
- 3/4 tsp salt
- Dash Pepper
Instructions
- Whisk together all ingredients for vinaigrette.
- Assemble fresh salad ingredients in large bowl and toss in vinaigrette. Enjoy
