Food For Thought  - Skillet Peach Crumble

Skillet Peach Crumble

Enjoy this skillet peach crumble as a breakfast delight or a quick and indulgent dessert. Peaches and cinnamon meld together for a spicy, rich and fruity flavor, balanced by a creamy mascarpone topping. Tangy and sweet, yet warm and spiced, this recipe delivers big flavor when you’re short on time.

Serves 2


Ingredients

  • 4 to 6 peaches, peeled and sliced
  • 4 tbsp butter
  • 1 tbsp sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • Pinch ground cloves
  • Pinch nutmeg

Instructions

  1. In a medium cast-iron skillet, melt the butter.
  2. Add peaches, sugar, cinnamon, cloves, nutmeg and vanilla extract to the melted butter.
  3. Bring to a simmer and cook for about 5 minutes, or until peaches are lightly softened.
  4. Add oatmeal topping and cook until topping is crisp.
  5. Remove from heat and let cool slightly.
  6. Top with mascarpone topping and serve.

Oat Topping

Ingredients

  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 cup flour
  • 2 tbsp ground or finely chopped nuts of your choice
  • 4 tbsp butter

Instructions

  1. In a medium bowl, mix oats, brown sugar, flour and nuts.
  2. Cut butter into four pieces and mix into oat mixture until crumbly.

Mascarpone Topping

Ingredients

  • 1 cup mascarpone
  • 1 tsp Torani vanilla bean syrup (honey or maple syrup may be substituted)
  • 1/4 tsp vanilla extract

Instructions

  1. Add mascarpone to a small or medium bowl.
  2. Add vanilla bean syrup and vanilla extract.
  3. Mix until smooth and well combined.
